Ingredients
2 cups fresh strawberries, hulled and sliced
3 cups watermelon, cubed
1/2 cup fresh mint leaves, chopped
1/4 cup feta cheese, crumbled (optional)
2 tablespoons honey
2 tablespoons lime juice (freshly squeezed)
1 tablespoon olive oil
A pinch of salt
A pinch of black pepper
Instructions
Prepare the Salad:
In a large mixing bowl, combine the sliced strawberries, cubed watermelon, and chopped mint leaves. Toss gently to mix the fruits and herbs evenly. If you’re using feta cheese, sprinkle the crumbled feta on top.
Make the Honey-Lime Dressing:
In a small bowl, whisk together honey, lime juice, olive oil, salt, and black pepper until smooth and well-combined.
Assemble the Salad:
Drizzle the honey-lime dressing over the fruit mixture and toss gently to coat all the ingredients evenly.
Serve:
Serve immediately as a refreshing side dish, light dessert, or snack. Enjoy the sweet and tangy flavors!
Notes
If you want a tangier kick, feel free to add a little extra lime juice.
For a sweeter dressing, you can increase the amount of honey.
If you’re looking for a vegan option, simply skip the feta cheese.
You can prepare the fruit ahead of time, but add the dressing just before serving to keep it fresh.
The salad can be chilled for about 30 minutes before serving to enhance the flavor.
